Removing acrylamide, which is produced when coffee is roasted, isn’t a viable option at the moment. Nor does it seem necessary yet — the cancer jury is still out on acrylamide, which also turns up when potatoes are fried and toast is burned.
I’m seeing a market developing for a toaster that toasts the Prop 65 warning on individual pieces of toast.
Although acrylamide may be a carcinogen in high enough concentrations, the evidence suggests that coffee at 4 cups or under a day is safe, and may even have health benefits.
The limit of 4 cups a day is caffeine related and related to cardiac health and not cancer.
A growing body of research shows that coffee drinkers, compared to nondrinkers, are:
less likely to have type 2 diabetes, Parkinson’s disease, and dementia
have fewer cases of certain cancers, heart rhythm problems, and strokes
The problem with this research is that it only shows a correlation, not cause and effect.

So, have your morning joe and one for a morning coffee break and one for an afternoon break. But, for most people, not one close to bedtime if you want to fall asleep easily.
